Wild mushroom tart with smoked duck breast, burrata, and red wine mustard dressing

Salmon and dill mosaic, smoked sour cream, avocado purée, and carrot pickles

 

 

Main Courses

Stone bass fillet, cheddar and broccoli croquette, baby vegetables and beurre blanc

Pan fried pheasant breast, apple samosa, baby vegetables, Rivesaltes wine sauce

Lamb fillet in gingerbread crust, pea flan, baby vegetables and Banyuls wine sauce

 

Desserts

Ultimate chocolate cake: chocolate sponge, vanilla and buckwheat ganache, dark chocolate mousse

Orange, pomelo and Grand Marnier gratin with honeyed puffed rice
