Whitby crab and confit leek ravioli, saffron crab bisque, and samphire

Smoked chestnut velouté, Comté and confit duck spring roll and black garlic espuma

Scallop and morel soufflé with Tio Pepe sherry sauce

Partridge, green cabbage and truffle ballotine, rhubarb and vanilla chutney, toasted brioche

Salmon and dill mosaic, smoked sour cream, avocado purée, and carrot pickles

 

Main Courses

Roasted lobster with chorizo and white bean mousseline, baby vegetables, mushroom cream

Herb pesto marinated beef, mushroom flan, baby vegetables, Benedictine sauce

Wild sea bass fillet, cauliflower waffle, baby vegetables, Champagne sauce

Pan fried venison loin, crispy potatoes, baby vegetables, red wine and lingonberry sauce

Lamb fillet in gingerbread crust, pea croquette, baby vegetables and Banyuls wine sauce

Ultimate chocolate cake: chocolate sponge, vanilla and buckwheat ganache, dark chocolate mousse

La Mandarine: mandarin liqueur lemon mousse, kumquat marmelade, dark chocolate coulis

Dark chocolate sphere, passionfruit and mascarpone mousse, warm caramel sauce

Revisited Tatin: Caramelised apple with Calvados, crème fraiche centre, Manzana liqueur sauce

Large macaron with plum liqueur ganache, confit plum and crème anglaise
